Last month I shared The Best Lentil Salad from My New Roots and mentioned I might start a series of posts that highlight recipes I’ve made from other blogs (or cookbooks). The main goals of the series are to share awesome recipes that I’ve tested out with you guys, highlight some of my favorite bloggers and to remind myself to actually DO something with all the recipes I spend time pinning or bookmarking.
Turns out, I have another winner to share… Chocolate Covered Katie’s Healthy Cookie Dough Dip.
I’ve been wanting to try this dip for ages, especially after hearing a rave review from Isaac’s sister who had it at a party a few months ago. Well, I finally got around to it last weekend. We were attending a Labor Day cookout and I needed a dessert that was easy to whip up and didn’t require a trip to the grocery store. Lucky for me, I remembered Katie’s cookie dough dip and had all the ingredients in the pantry to make it.
I followed her recipe using canned chickpeas, maple almond butter, 3 Tablespoons of sugar, 1 Tablespoon ground chia seeds, dark chocolate chunks and a splash or two of unsweetened vanilla almond milk.
I was going to make the sugar-free version with stevia but Katie recommended using sugar if you were planning to a take it to a party so I took her advice. Since I was already using maple almond butter (which btw, is awesome), I decided to use a minimal amount of natural sugar — only 3 Tablespoons. It was still plenty sweet for me. Side note: this dip is pretty addictive — I literally had to stop myself from sneaking bites so that I would have a good amount to take with us to the party.
The hardest part was choosing what to serve the dip with. It literally took me 20 minutes at the store (longer than it took to make the dip itself) trying to decide what dippers would go best with it. I wanted something a little sweet, but not over the top sweet and it also couldn’t be brittle because the dip was pretty thick and I didn’t want the crackers/cookies falling apart in the dip. Decisions, decisions.
I ultimately ended up with apple slices and Apple Oat Crunch crackers. It was my first time trying Dr. Kracker crackers and they were really good — crunchy, seedy and a tad bit sweet. They paired nicely with the dip too. Everyone that tried it at the party thought it was tasty and no one guessed that it had beans in it either. Score!
Overall, this Healthy Cookie Dough Dip was a hit. I’ll be making again and I’ll definitely be making a batch of Pumpkin Cookie Dough Dip this fall. Can’t wait!
