The weekend is almost over so I’m savoring the last few moments. I hope yours was wonderful – here are a few highlights from mine:
Arriving home on Friday evening to the sweetest little engagement photo package from Michelle Chu Photography. (Have I mentioned how much we love her?)
A super fun Saturday spent with my favorite cousin (and bridesmaid), Brooke.
Protein Pancake / Perfect Fit protein powder chat with Jenny.
A grilled dinner with lots of delicious veggies along with some salmon and camera shy veggie burgers.
Scoping out South of the James farmers market flowers = what I want to use for my wedding bouquet and decor.
Healthy eats at Broad Appétit with these two lovely ladies.
Cauliflower Tabouli from The Nile. I had this same salad last year at Broad Appétit and loved it so much I made my own version at home, with a slightly different name: Raw Cauliflower Tabbouleh.
I also tried Tio Pablo, a new gluten-free taco restaurant in Richmond.
Nopales salad – sauteed cactus with tomatoes and jalapeños. Super spicy, fresh and tasty.
I also bought some locally made Pumpkin Seed Ginger Granola from Macshack Acres.
A snickety snack from Sweet Frog.

Did you stick with your healthy eating and workout goals over the weekend? As it turns out, it’s a little harder to follow all the tips than it is to write them down. 🙂 Overall, I did a pretty good job but also had a few slip-ups. I’m excited for the coming week though because I’m joining Katrina and Karena for the Tone It Up Nutrition Plan 5 Day Slim Down! Having the whole TIU team on board with it this week will be awesome motivation!
