WIAW: Health Coach Eats

Good morning friends! I’m hoping on the What I Ate Wednesday train today so let’s get right to it.

Hardboiled Eggs

First up, two hardboiled eggs after Orangetheory. I took the photo at home, but I actually brought the eggs with me and ate them right after my workout. Classy.

Coffee + Inspiralized

I swung by Whole Foods on my way home, grabbed an almond milk café au lait and published yesterday’s post. I also did a little meal planning (with Inspiralized!!) and picked up some groceries. I’m glad I went early because by the time I was finished (around 10AM) the store was getting busy with Thanksgiving shoppers. I could tell most of the shoppers were hosting Thanksgiving dinner because their carts were PACKED — literally the most massively packed grocery carts I’ve ever seen.

Kombucha

For whatever reason I haven’t been drinking kombucha lately, but the Sharing Gratitude bottle attracted me so I grabbed this new GT’s flavor flav with turmeric, carrot and ginger. It was really good and reminded me how much I like kombucha.

Lunch Bowl

Once home I whipped up some lunch. This bowl has quickly sautéed baby spinach, a can of salmon (I love the Wild Planet brand), half an avocado and hemp seeds on one side and leftover roasted brussels sprouts on the other. I also topped it all with sriracha. <— I’ve been using the Sky Valley brand and really like it!

Dirty Kitchen

After lunch I did some recipe testing for two different salads… here’s what my kitchen looked like afterward. #ihatedishes

La Croix

Throughout the afternoon I guzzled down two grapefruit (pamplemousse) La Croix. The grapefruit and lime are still my go-to flavors.

Dinner

Taste-test bites of these salads + some ingredient munching ended up being my afternoon snack and then a little later I ended up making a big bowl with both and having that for dinner. This is typically what happens on days I make recipes for the blog. Luckily I was making salads and not cookies considering cookies for dinner isn’t a good example of health coach eats. 😉  That said, these salads were both DELISH! I can not wait to share them with you.

Edamame Snack

I spent the rest of the evening on the computer getting things ready for the Healthy Holiday Challenge that starts next week. While working I grabbed a handful of dried cranberries and heated up some edamame. Kind of a random combo, but it was fast and satisfying.

I’m pretty sure that’s everything I ate, but who knows I probably forgot something. :) I hope you have a wonderful Thanksgiving tomorrow (if you’re celebrating). <3
